Green Tea Roll Cake • 抹茶蛋糕卷

You can also add your favourite fruit

STEP 1:

Prepare food materials:

Eggs: 4pcs

Milk: 55g

Oil: 40g

Matcha: 8g

Flour: 60g

Sugar: 65g

Salt: 1g

Whipping cream: 150g

STEP 2:

Take two clean oil-free containers,and then separate egg white from egg yolk.

STEP 3:

Add oil,milk and salt into egg yolk.Then mixing evenly.

STEP 4:

Mix the matcha tea powder and flour and sift them into the egg yolk.Then mixing evenly.

STEP 5:

Add sugar to the protein in three times,and use electric egg beater to send it at high speed.Until the protein is wet and frothed.(Just as the picture)

STEP 6:

Mix the meringue of step5 and egg yolk paste of step4.Until stir evenly.

STEP 7:

Spread oil paper on the baking tray and pour batter into the baking tray to smooth the surface.Then bake at 170℃ for 15 minutes.

STEP 8:

Turn the cake upside-down and demold.(Cool the cake)

STEP 9:

Add the remaining sugar to whip cream in a low temperature room(this is the hardest task in whole process ) then mix with the mashed durian.

STEP 10:

Spread the whipping cream on the cake and roll up the cake.

STEP 11:

Put the roll cake into the fridge for an hour .
