蒸鸡蛋焖子

鸡蛋焖子应该是北方特有的吃食,长相有点像鸡蛋羹,味道跟鸡蛋酱类似,但是是蒸出来的,用途也是用来拌菜吃,卖相不好看,吃起来好吃。

先准备几个鸡蛋,再切一些葱花和青椒碎。鸡蛋焖子的重点就在青椒的清香上。

调味就是花椒粉、咸盐和干黄酱还有少量的水,如果不放水,蒸出来的鸡蛋闷子会特别干。

然后搅拌均匀,中间可以再卧一颗鸡蛋。

上笼屉蒸20分钟,中间随时用勺子挖一下,看看里面熟没熟,因为蒸碗的厚度不同,耗时也不同,其实不太好蒸熟。

下面还需要蒸一些配合鸡蛋闷子的吃食,就是茄子和土豆。

鸡蛋闷子和茄子蒸的时间差不多,土豆蒸得比较慢,可以切开蒸。
鸡蛋焖子蒸出来之后是这样的,一般鼓包鼓到整个碗都满了,就差不多熟了,但是还是要用勺子挖到底看看。

鸡蛋闷子的吃法是这样的,把蒸的土豆和茄子放到碗里一起拌着吃。

当然也可以配上一些小葱、黄瓜、青萝卜,这些都能沾着鸡蛋闷子吃。
