食材:牛腱2份、番茄5顆切塊、蔥2根切段,2根綁成束狀、薑片6片、辣椒3根、八角2顆、月桂葉 1片
*牛腱2份(一份切塊,一份保留原型不切塊)
調味料:辣豆瓣醬2大匙、醬油5大匙、紹興酒3大匙

鍋中放少許油熱鍋,放入薑片、蔥段、辣椒以中小火爆香

薑片、蔥段、辣椒推到一旁,將牛腱切塊片放入,中大火略煎兩面鎖住肉汁

放入辣豆瓣醬炒出香氣

倒入適量的水煮滾(可淹過食材就好),煮滾後加入綁束的蔥及月桂葉和八角

放入另一份原塊牛腱一起燉滷

蓋鍋後以小火燉滷約1.5小時至2小時

燉滷牛腱到軟嫩後(筷子可輕鬆穿刺過去即可)
將原塊未切的牛腱取出放涼即可放密封保鮮盒冷藏(裡面放些滷汁讓牛腱泡著持續入味)

剩餘湯底撈出八角、月桂葉及蔥和薑片等,就可以直接做牛肉麵。

隔日晚餐取出冷藏過的牛腱原塊切片
如果想吃熱的就加熱預留的滷汁
再將切片後的牛腱片放入稍微加溫即可盛盤享用
涼拌用的滷牛腱一定要冷藏過後再切片才會切得漂亮
撒上滿滿蔥花就是超對味好吃
