柠檬蛋糕卷

This lemony light cake roll adapted from my sister Rose’s recipe. She’s the official “Torta” maker for our family gatherings. You can be creative with this recipe, so go ahead and substitute the lemon filling with your favorite sauces, such as; chocolate, marmalade, fresh berries or jarred fruit fillings. 

这个柠檬蛋糕卷来自我的妹妹Rose的食谱,你可以在这道点心上发挥想象力,因此来吧,把柠檬馅儿料换成你喜欢的果酱!比如说巧克力、橘子酱、新鲜的莓果或者是罐装水果馅儿料。

Makes 1 - Serves 6-8

6-8人份

材料:

5 eggs separated and room temperature

5只室温鸡蛋,分离蛋清蛋黄

 ¾ cup flour

3/4杯面粉

1 teaspoon baking powder

1茶匙发酵粉

½ teaspoon salt

半茶匙盐

2 teaspoon crated lemon peel

2茶匙柠檬皮

1 tablespoon lemon juice

1汤匙柠檬汁

1 package instant Vanilla or Lemon pudding mix 

1包即食香草或柠檬布丁

1 and ½ cups milk

1.5杯牛奶

¾ cup sugar

3/4杯糖

Preparation

准备:

Preheat oven to 350 degrees F. Grease or spray a large sheet pan and line with parchment paper.

预热烤箱175摄氏度,在烤盘上抹油,铺上烘焙纸。

Combine flour, salt, and baking powder in a bowl.

把面粉、盐和发酵粉在一只碗里混合。

In a separate large bowl beat egg yolks with ¼ cup of sugar until lemony. Add flour mix, lemon zest and lemon juice and mix well for about 5 minutes. Set aside.

在一只碗里,把蛋黄和1/4杯糖搅打,直到变成柠檬色。加入面粉混合物、柠檬皮和柠檬汁,混合好,大约需要5分钟。放置一边。

In a separate bowl beat the egg whites until they form soft peaks. Add the ½ cup sugar gently into the whites until stiff peaks form.

在另一只碗里,打蛋白,直到你能够挑出柔软的峰来。慢慢加入半杯糖,搅打,直到你能够挑出稍微坚硬的峰来。

Gently fold the egg whites into the egg yolks. Pour the mixture into the lined sheet pan spreading evenly. Cook for about 15 minutes or less depending on your oven. The cake should be golden light brown in color.

慢慢地把蛋白加入蛋黄混合物里面,把这些混合物铺在烤盘上,尽量涂抹均匀。进烤箱,大约烤15分钟,这时候蛋糕的颜色应该是浅的金棕色。

While the cake bakes, prepare the pudding using only 1 and ½ cups of milk and set aside.

当蛋糕在烘焙的时候,用一杯半牛奶准备布丁备用。

Place a clean linen white kitchen towel or parchment paper on the counter and sprinkle generously with granulated sugar. Slowly flip the cooked cake pan onto the towel. Peel off the parchment paper, then roll up the cake with the dish towel and let it sit for 5 minutes for the cake to cool.

将干净的厨房毛巾或者烘焙纸放在工作台上,撒上砂糖,慢慢把烤好的蛋糕翻转到这上面。撕掉烘焙纸,然后连同烘焙纸或者毛巾一同把蛋糕卷起来,放置5分钟,等待冷却。

Unwrap the cake gently. Spread the pudding evenly over the cake. Remove towel and gently roll the cake into a log shape. Place with edges side down on serving dish.

把蛋糕卷打开,把布丁铺在蛋糕上面,把烘焙纸或者毛巾拿走,把蛋糕卷成长条状,把卷边儿的那面朝下放置。

Sprinkle top with a dusting of sugar.
