(1)色是菜之肤,色彩追求自然,色泽追求靓丽
(2)香是菜之气(菜在喘气,在呼吸)有生命
(3)形是菜之姿,厨师要有审美观,要赋予菜的形姿
(4)器是菜之衣,器皿搭配可使他它身价倍增,切忌单调。
(5)质地是菜之骨,应酥的酥,应脆要脆,该软要软,摆盘的菜量一定要精细少,拍照才有美感!
(6)声是菜之音韵,交流讲话由菜来做,响则能闻。铁板类、锅仔等。
(7)味是菜之血,调料不只是体现味道更是决定菜品的性质。
(8)温是菜之脉,温度决定风度,热菜上桌一定要烫,要持续,冷菜上桌要凉而不冰。
(9)菜品营养之本,各种人群需要的营养成分不同,营养正在日益为人类关注。
(10)卫生是菜之基,餐饮的安心工程,病从口入。
