Shrimps and steamed eggs
Get rid of the heads and shells of the shrimps. Get rid of the dark thread in the shrimp's body. It might contain mud or sand.
Wash the shrimps clean. Coat the shrimps with moist flour, liquer and salt.
Stir three small eggs in a large bowl.
Pour boiled water into a cup. Wait until the water is cool.
Add a small amount of water to the egg.
Steam the egg for ten minutes.
Boil some water. Add pepper to the boiled water. Boil the shrimps in one minute.
Take out the shrimps.
Add a small amount of water into a wok. Add a bit soybean sauce, liquor, sugar and vinegar into the boiled water.
Boil the soup until it is thick. Thicken the soup with moist flour.
Put the boiled shrimps into the thick soup. Simmer the shrimps in the thick soup, until the shrimps are coated with thick ingredients.
The egg is steamed.
Pour the shrimps on top of the steamed egg.
Dip some sesame oil into the bowl.
Boil some tender green vegetables in the wok.
Place the vegetables in the bowl.
The dish is ready!
Tender egg, tender shrimps with good flavor!
Tips:
Steam the eggs for just ten or fifteen minutes. Check the egg very often. Do not steam for a long time, or the eggs would turn rough, not tender.
Add boiled water to the egg. Do not add cold water to the egg. Or the egg would not be tender.
Note the amount of water when preparing soup for the shrimps. Not too much water. When the soup thickens, it would turn delicious.
