年的味道~美食油炸糕制作全纪录

20180220,大年初五,妈妈为我们制作了美味的油炸糕,我的记忆被带到了儿时,想起了小时候的手工元宵。吃着美味的油炸糕,想到了句经典的广告词:"还是原来的配方,还是熟悉的味道"!油炸糕味道很棒,制作过程却是很不简单。在此做一记录,喜欢的伙伴可以动手一试哦!
馅的制作
原材料:花生米,核桃仁,黑芝麻,白芝麻,桃酥,红糖
首先将花生米炒熟,将炒熟的花生倒到簸箕上筛一下去红皮,还要同时动手把红皮碾掉。这个过程需要反复几次,看妈妈做起来很娴熟,自己真正操作还是不容易的。

花生去红皮后,放在面板上。此时来到了第二步:把花生碾碎,这绝对是一个力气活。妈妈说要用玻璃瓶子,因为擀面杖比较细,不好用力。在妈妈的指导下,我和宝丫爸也一起动手操作了。花生米比较硬,真心不太好擀。哈哈,此时我想吟诗一句:只要功夫深,花生碾成粉。

在做花生的同时,我和弟妹也在做核桃部分的准备工作,工序是一样的,先是扒核桃仁,然后炒熟去皮再碾碎。跟花生比起来,核桃没有那么硬,要好擀些。

下一步是放入熟的黑芝麻和白芝麻,同样的方法碾碎。

然后去桃酥,同样方法碾碎。

下一步就是拌馅啦,搅拌的时候要加入浓的红糖水。

搅拌完成后,馅是泥状的,要攒成球备用。这个时候的馅又香又甜,非常好吃哦!

面皮的制作
原料:粘面,开水
和面绝对是一个技术活儿,因为是粘面,所以非常不好和,妈妈说一定要用开水,软硬适中。和面是需要多年的实践操作和经验积累完成的,所以只能简单表述了!

经过几个小时的努力,终于要到最后一步啦,炸起来。倒入足量的油,要把油烧热,因为油温不够炸不起来,这个过程自然是妈妈亲自上手啦!
