女儿想吃抹了甜面酱的鸡蛋灌饼,第一天夜里我熬好了甜面酱,第二天早早起床,把各种配菜准备好,还煎了几根火腿肠。

开始和面了。
听说鸡蛋灌饼的面一半用开水和面,一半用凉水和面。于是我就这样做的。

把大面团擀成面饼抹上盐和油,把小面团上抹上油酥,我没有做油酥,就抹点油代替吧。

这一步很关键,一定要包严实,以免下一步擀面饼时有气泡跑出,以免炕面饼时跑气而导致面饼不能鼓起来,而无法把鸡蛋液灌进去了。

两面都煎一煎,面饼中的鸡蛋熟了,饼子鼓鼓囊囊的。这时把饼子放在案板上,抹上甜面酱。
