把“烫面法”和“蒸”相结合,口感很美妙,介于普通戚风和轻乳酪之间。此方为6寸用量,我用了两个小模具,超级萌。作为宝宝的小点心很赞,无需烤箱就能完成!
关于这道辅食:
菜名:超软烫面蒸蛋糕
月龄:12M+
食材:低筋面粉80g、鸡蛋2个、纯牛奶80ml、细砂糖10g、细砂糖20g、核桃油15g、柠檬汁几滴
制作步骤:
1、准备食材,把2个鸡蛋分离蛋清蛋黄,分别放在两个无水无油的容器里

2、把80ml牛奶+15g核桃油+10g细砂糖(放入蛋黄)混合加热至微滚(大约80℃),边缘产生一圈气泡后离火

3、筛入80g低筋面粉拌匀,这就是所谓的“烫面”,把面粉烫熟,可以使我们做的蛋糕更柔软,烫面团冷却后放入蛋黄,搅拌成蛋黄糊备用

4、这个时候可以预热蒸锅啦。接着大发蛋白,加几滴柠檬汁,既可以去腥也可以增加稳定性,20g白砂糖(放入蛋清)分三次加入,告诉打至九分发(如图提起蛋抽,小尖角微微下垂)

5、取1/3蛋白霜到蛋黄糊里,搅拌均匀,切记不可画圈,拌好后到会蛋白盆里,搅拌均匀

6、分别倒入两个模具中,轻震去除大气泡,封上保鲜膜,放入沸腾的蒸锅里,中小火蒸40分钟,关火再焖5分钟,出锅后迅速撕掉保鲜膜,震一下排热气,迅速倒扣,放凉脱模即可
