咸蛋月饼
准备食材(10个)
月饼馅料:
140g生黑芝麻
45g糖
55g无盐黄油
40g糯米粉
5个咸鸭蛋黄(分半,大约14g/半个蛋黄)
月饼面皮:
56g糖浆
2g枧水
20g植物油
0.5g盐
少量蛋液
100g蛋糕粉
1个蛋黄(或全蛋)

具体步骤
月饼馅料
1.锅中加黑芝麻,中火加热,锅变热后,关小火,每3—4分钟搅拌一次,直到你能闻到很浓郁的芝麻香并且能听到滋滋声,盛出备用。

2.黑芝麻降温后,加到搅拌机中搅拌,直到黑芝麻开始渗油、变厚,大约用时2分钟;用抹刀将搅拌器边缘和底部的黑芝麻刮下来再次进行搅拌,充分搅碎,用时约1分钟。

3.如图,搅拌器中加糖、黄油搅拌,完全混合后,取出,备用。

5.黑芝麻面团分成10等份,每一份约20g—30g,每一份都搓成小球,备用。
6.如图,黑芝麻球压成皮状,蛋黄放在中间,再将黑芝麻面皮边缘向上端收起,直至将蛋黄包裹住,再将黑芝麻团揉搓成小球状,剩余黑芝麻球一样操作即可。

7.揉好的馅料放在冰箱里冷却,让黑芝麻球变硬。
月饼面皮
1. 碗中放糖浆、水充分混合,直到混合乳化。再加入油,直到均匀混合。(可能仍然会出现分离,但试着尽可能均匀地混合。)

1. 舀2茶匙面团,擀压成圆皮,中间可以稍薄于边缘。

4.如图,将月饼模片有花纹一侧朝下放入模具中,将面团放入模具,倒扣放在烘焙纸上,用力按压,月饼就可以成型了,小心拿走月饼上面的模片。(如果月饼按压出的花纹不清晰,你可以将月饼面团用保鲜袋分开装好放入冰箱冷藏10—20分钟,变得硬一些,不要冷藏太久。)

烤月饼
1.烤箱预热至180℃,月饼放在烤盘中,喷上薄薄的一层水,防止月饼开裂。
2.碗中放蛋黄、盐,搅拌均匀,备用。
3.如图,月饼放在烤箱中层,烤8到9分钟,直到面团更硬,月饼的边缘开始变成金黄;从烤箱中拿出月饼,表面刷一层薄薄的蛋黄液,只刷顶部,四周不用刷。如果刷太多,就用小刷子清除掉多余蛋液。

4.月饼再次放回烤箱继续烘烤,直到鸡蛋呈金黄色,大约8分钟;烤好后,将月饼完全冷却。
5.月饼存放在密闭容器中,24小时后可食用,放上3天时间回油,月饼的外观和味道会更好。
