2条带鱼,大蒜,一小碗剁椒,生姜,小葱,豆豉,蒸鱼豉油,白酒,油。

做法:
小葱切成葱花。

大蒜去皮,洗净,剁成蒜末,备用。生姜切片。

带鱼去鱼头、鱼鳍、鱼内脏。注意:把鱼肚子里面的黑膜也清洗干净,在表面打上花刀,然后切成小段。

将带鱼段放入碗内,加生姜、一点点白酒,腌制5分钟去腥。

锅内倒油,放入豆豉和蒜末炒香,随后再倒入剁椒炒香,出锅。

将带鱼铺入盘底,淋上炒好的剁椒,把盘子放入蒸锅内蒸制。

大火蒸6到8分钟,就可以取出了。
