[材料]:藕、猪肉馅、精盐、油、鸡蛋、面粉、生姜、酱油、无铝泡打粉

猪肉馅调进精盐、油、姜末、酱油搅拌均匀腌渍入味。

面粉里磕入鸡蛋、倒入泡打粉,倒进少许清水

顺一个方向搅拌成粘稠的面糊;

把藕皮削掉切掉两头的藕尖。把藕的中间粗壮段用刀切成稍微厚一点的藕片,切第一刀时底部不要切断,接着切第二刀切断后使两藕片成一个底部相连的夹子。

把切藕夹剩余的藕尖等用刀剁成细粒,拌在肉馅中。

腌渍好的肉馅用筷子塞入藕夹的中间,塞满抹匀。

依次把所有的藕夹都塞进肉馅做成藕盒。

锅里倒入植物油,小火烧热。把藕盒放入面糊中用面糊裹匀。

锅里油六成热时把藕盒放入,小火炸熟捞出控油。最后把油烧到7、8成热,把炸好的藕盒入热油锅复炸一次,这样藕盒外皮金黄焦脆。
